Grilled Al Pastor Tacos
Prep: 25 min | Marinate: 4–12 hr | Cook: 15 min | Yield: 4–6 (10–12 tacos)
Grilled al pastor pork tacos with charred pineapple, chopped onion and cilantro. A grill-forward recipe designed for weeknight inspiration and weekend cooking.
Ingredients
Marinade
• 2 lb thinly sliced boneless pork shoulder
• 3 tbsp achiote paste
• ¼ cup pineapple juice
• 2 tbsp apple cider vinegar
• 2 tbsp orange juice
• 2 garlic cloves
• 1 tsp cumin
• 1 tsp oregano
• ½ tsp salt
• 1–2 chipotle peppers in adobo
To serve
• 1½ cups fresh pineapple slices
• 10–12 corn tortillas
• chopped onion
• cilantro
• lime wedges
Instructions
1. Blend marinade ingredients until smooth. Coat pork and refrigerate 4–12 hours.
2. Preheat grill to medium-high, around 400–450°F, with a cooler indirect zone.
3. Grill pineapple slices until marked, about 2–3 minutes per side; dice.
4. Grill thin pork slices in batches, about 2–4 minutes per side depending on thickness, until pork reaches at least 145°F with a 3-minute rest. Avoid crowding and flare-ups.
5. Chop pork into bite-size pieces. Warm tortillas and top with pork, pineapple, onion and cilantro; finish with lime.
Grilling tip & food safety
Thin pork slices give the charred edges associated with al pastor without needing a vertical spit. Achiote paste varies in saltiness; taste the marinade before adding raw pork.
